Meet the Team

John Arnolfo
John’s roots stem from an Italian family that immigrated to the United States in 1914. John’s father was one of the 4 million Italians that arrived on Ellis Island with his family to start a better life. His hard work and “pull yourself up by your bootstraps” attitude landed him a wonderful life, and this attitude was instilled in John Arnolfo Jr.

John first came to Fort Collins to attend CSU in 1969. After graduation he took time out to enjoy the slopes of Vail and work in the restaurant industry. Needless to say with John’s drive and love of the restaurant industry he returned to Fort Collins and bought the Silver Grill Cafe, a modest eatery with a seating capacity of 40. With the purchase of 4 additional buildings and 4 expansions, the restaurant has grown to capacity of 150 with seating for 35 on the back patio.

Over the years John has enjoyed serving the Fort Collins Community in more ways than just eggs. He has served as president of the Downtown Business Association, board member of Larimer County Mental Health, and a director on the boards of the Chamber of Commerce and the Convention and Visitor Bureau.

Heather Beckman
Northern import by way of the islands, Cheesehead at heart.

Heather was born and raised in Appleton, Wis. and fell in love with the restaurant industry at the tender age of 15 serving at a high impact breakfast, lunch and dinner establishment. She took this love of the food industry to a 2003 culinary arts degree, specializing in pastries. Throwing caution to the wind, Heather decided to leave the head pastry chef position at “Green Bay Country Club” and move overseas to experience what other cultures were all about.

Heather and her newly married husband Ian spent three amazing years in Greece managing a Greek bar that catered to both tourist and locals alike. Missing home a bit but not willing to give up on “island living,” she and her husband relocated to St. John in the U.S. Virgin Islands where they both managed a local favorite eatery specializing in Caribbean cuisine, and after Heather arrived, amazing desserts!

Heather and her husband were visiting friends in Fort Collins in the fall of 2007 and quickly fell in love with the local people as well as Fort Collins local charm. Packing up once again Heather and her husband set down roots and have never looked back. Heather brings with her 22 years of well rounded restaurant experience and two beautiful little ones, Athena, and Orion.  Heather and her husband have never been happier and look forward to a long future in Fort Collins serving the people and the town.


Ian Beckman
A downtown boy start to finish.

Ian was raised in Appleton, Wis. by a father in the advertising business and mother in retail shopping center management. With his parents as an example he quickly formed a love for dealing with people and what they are looking for in a good business. Ian found his way into the restaurant industry at the age of 17, taking a bar/catering runner position at a large five diamond hotel situated in the middle of the downtown area of his home town. Ian attended college at the University of Wisconsin Oshkosh. Using the savings his parents had for him as well as working part time and full time in the restaurant industry, Ian graduated with a degree in English literature. He learned a lot about the classics but really learned he loved working in restaurants more. After graduating Ian met the more important love of his life, his beautiful wife Heather.

Heather and Ian decided that there was too much world to see and shortly after getting married spent a whirlwind 5 years traveling through Europe while working tourist seasons in Greece and the Virgin Islands. Both were able to take much from the experience including different management styles, various culinary techniques and exciting new tastes.

Feeling the pull of father time as well as missing a family life, Ian and his wife decided that while living the globe trotting lifestyle was fun and a great learning experience, starting a family and setting roots was what they both wanted. While visiting friends in Fort Collins Ian immediately felt the excitement again of his first job in the busy downtown of his home town. He fell in love with both the Fort Collins area the friendly local residents. Ian brings with him 24  years of well rounded restaurant experience, his lovely wife Heather, his beautiful daughter Athena and son Orion.  Ian and Heather look forward to a long and wonderful relationship with both Fort Collins and its residents.
